Five questions to fight back the crisis: Adal Márquez – Boadas

Our long tour continues around the world and after Beirut we land in Barcelona to meet Adal Márquez from Boadas

Thanks Adal, first of all, tell us who you are

I am Adal Márquez , honored for being the HeadBartender at Boadas Cocktails in Barcelona. It is a very old and tiny bar, full of history and inheritor of Constante Ribalaigua and La Floridita heritage, cradle of the throwing and one of the most iconic bars in the world.

Could you describe, in short, your bar, its mood and your philosophy of bar?

My philosophy at Boadas is to keep alive the bar and rise the legend, trough the perfect execution of the classics, being respectful to the forms, always smiling to my guests, and trying to be everyday the best version of myself making the guest feel like at home in Boadas and creating memorable experiences for them.

Coming to the covid-19 crisis, how did you react humanly, psychologically at the spread of the virus and the consequent lockdown?

I tried this days to rest, to read a lot of classic books but not cocktail books (poetry the most), being in touch with family, friends…time to think about nothing and about everything at the same time. For many years I did not have a break, the opportunity to stop for a second. The drastic situation made it possible for ourselves to self meditate and focus even better in our business in the near future.

When the re-opening will be announced in your country what you will concretely do? what action will you put into practice?

The Government announces the reopening for June here in Barcelona for small bars like Boadas, actually I’m preparing a new “special” menu, we have gathered 15 different recipes of Daiquiri from 15 Masters around the world, the best bartenders and loved friends of Boadas, they give us their recipes just for love and friendship, the menu will be called “Masters of Daiquiri” . I can’t wait to see it works out!

What do you suggest to those who will be facing the re-opening phase soon?

Don’t forget to smile, sometimes we rise, sometimes we fall, 10 years ago I was working in a restaurant and at a disco club at nights. I’ve never thought about working at Boadas, or to make a masterclass in SouthAmerica or Asia…now, we’re closed, maybe a lot of people will not re-open again, but even if bars close it’s doors, in a small time a lot of bars will be open again, we need the bars, we love the bars, this is just a time´s question and bartenders are like rocks.
