Our long journey comes to Australia, in Sydney to interview Andrea Gualdi from “Maybe” group.

Thanks Andrea, first of all, tell us who you are

, I’m the creative director of the “Maybe” group, Maybe Frank, Maybe Sammy.

Could you describe, in short, your bar, its mood and your philosophy of bar?

Maybe Sammy is defined as “hotel bar minus hotel” as a kind of modern classic cocktail bar, with the service, hospitality and feeling that you would expect from and hotel bar but without all the rules that sometimes those bars have. Our philosophy is to put guest experience first, we understand that bar is pretty much similar to show business and we take inspiration from the roaring 50’s and the rebirth of cool.

Coming to the covid-19 crisis, how did you react humanly, psychologically at the spread of the virus and the consequent lockdown?

With this virus spreading, as first reaction was probably a bit of fear. Then quickly replaced by hope, we understand that in hard situation is who can adapt quickly who will succeed so we tried our best to

start different projects and try to keep our bar alive and get in touch with our guests with our bottled cocktail line, we need to keep up hope and try to give to our guests a good time and a good vision of the future especially in hard times.

When the re-opening will be announced in your country what you will concretely do? what action will you put into practice?

Most likely many things will be different, also probably the sequence of service will be changed as different rules will be in place. We will start by making sure our staff will be safe and our guests. Then we will try to work to organically get back to normality, hopefully soon.

What do you suggest to those who will be facing the re-opening phase soon?

I would say to take it easy with it, do not rush and make sure your staff is trained to handle the new rules, it will be crucial for us to maintain a safe environment and prevent another crisis as the one we are currently living.
